Vegetarian Chili Made Easy

Veggies and Mushrooms.

Something to try next time you have some vegetarian friends come over. Prep time is about 20 to 30 minutes and cooking time is around 30 minutes.
Ingredients:
Two Tomatoes
Half an Onion
One Cucumber
One Squash
One Green Pepper (can also use red and yellow peppers)
Mushrooms
One can of Black Beans
One can of Red Beans
One Clove of Garlic
One pack of Chili Seasoning Mix
Remember that you can make it any way you desire and change the ingredients to your liking. Start by sauteing the onions, garlic (mince), and green pepper for about two to three minutes.

Add the Cucumber and squash and cook over medium heat for a minute or two.
Add the rest of the ingredients.

After adding the tomatoes, beans, mushrooms, and seasoning mix stir well. Cover and cook for 20 to 30 minutes.

If you prefer a soupy chili add a teaspoon of water otherwise there is enough juices in the veggies.

See.You can add corn at the last few minutes or next time lets try adding different kinds of mushrooms. Hope you enjoy this as much as we enjoy making it. Now serve yourself a large bowl and fill your belly.
